My favorite embellishment on a jacket with a bound edge is the addition of beads.  I sew the binding to the wrong side of the jacket/lining, then finish by hand, adding a bead on every other stitch.  You can aid spacing of your stitches by using a length of "tiger tape" next to your binding.
